Since we are in the business of getting your mind and body healthy, why not add some healthy food into that as well?  We love this salsa because it is so easy to make and uses all fresh ingredients.

It can be modified to add some more spiciness as well if you so desire, just throw in some jalapenos.

Healthy Summer Salsa

Ingredients:

  • 4 ears fresh corn kernels

  • 4 tomatoes, chopped

  • 1 hot yellow banana pepper, chopped

  • 2 cloves garlic, minced

  • 1 cup chopped green bell pepper

  • 1 tablespoon chopped fresh basil

  • 1 tablespoon chopped fresh sage

  • 1 tablespoon chopped fresh thyme

  • 1 lemon, juiced

  • 2 teaspoons olive oil

Directions

  1. In a large bowl, mix together corn kernels, tomatoes, hot yellow banana pepper, garlic, green bell pepper, basil, sage, thyme, lemon juice and olive oil. Cover and chill in the refrigerator at least 1 hour before serving.
